I've always been the creative type and consider myself artistic.
I never considered the possibility of integrating my love of art with my love of food, until one day...
It all started out by having a job in a restaurant. Truth of the matter was, I really didn’t care so much as long as I had a paycheck coming in.
One day I was playing with a co-worker, throwing potatoes and carrots back and forth in the kitchen (yea, real responsible.. I know), this was right after taking a pan of cheesecake out of the oven.
One of the pieces of potato landed on my cooling cheesecake and broke the top. Yikes! So I took the potato off, my responsibility and all, and I noticed this cheesecake didn’t look quite done. “I should put this back in the oven for another 5 minutes…” I thought to myself.
To make a long story short, I never put the cake back in the oven.
When I was done goofing off, I noticed the cheesecake had already cooled. It was too late to go back in the oven now.
So I did what I thought most people would do at the time, I put the cooled dessert on a rack in the refrigerator.
The next day, when it was time to serve dessert… I remember slicing that cake. It was creamier than anything I had baked at the time.
We served it to our guests, when our customers and other employees ate it… the compliments poured in.
My baking skills really paid off… Hehe
I discovered something that day… since cheesecake is more of a custard type dessert, it’s best to pull it out of the oven when the center is “almost set”. This simply means, if you tap the side of the pan and your cheesecake barely jiggles in the center, it’s perfect. If it doesn’t jiggle at all, it’s completely set.
That’s how I learned this technique. Sure.. I could’ve read some books on baking, or paid attention to those who were teaching me… but I had a lot going on already with the carrots and potatoes.
Soon after, I decided I was on to something. Every day since then, I’ve expanded my knowledge about baking by experimenting… and yes, I’ve even took up reading on the subject.
Now, you can have the benefit of my baking skills without throwing a single vegetable at another person! |
