OK, So here is my problem. I make a beautiful Catfish Quesadilla with a home made guacamole salsa but I think having a pallet cooling tzatsiki greek sauce would take it to the next level. I use a cajun based cornmeal blend that gives the fish a slight spiciness , with mexican three cheese blend...YUMYUMYUM!!!  Please help top this dish off right.

Will this help:

 
Tzatziki              &nb sp;

   










  1 1/3 cups plain yogurt
1 cup English cucumber, grated and squeezed dry
2 teaspoons olive oil
2 teaspoons lemon juice
1-2 clove garlic, smashed
1/4 teaspoon salt
1/4 teaspoon pepper


Set yogurt in a cheesecloth lined sieve over a bowl.
let drain in refrigerator until reduced to 1 cup.
At least 4 hours (make ahead: refrigerate for up to 24 hours).
Stir in cucumber, olive oil, lemon juice, garlic, salt and pepper.

OK kwc tonite is catfish tzatsiki quesadilla nite. I'll let you know how it goes. I just finished my habenero guacamole for the cover sauce its chillin, I'm so pumped up for this new addition. I'll hit you up tonight or tomorrow. Have a flavorfull evening and GOD BLESS AMERICA !

Hi. MrsS here with an alternative offer. Crema Mexicana as it is called here in the Northern Plains, is a cross between creme fresh and sour cream. You could mix creme fresh and sour cream with some lemon zest and dill to top your meal.
