Just a little info on soft and semi-dry dates.

SOFT DATES:  Have the highest moisture content and should be stored in the refrigerator.

MEDJOOL:

These are dark brown, sweet, rich in flavor, meaty, moist and sticky.  They vary greatly in size, but are generally the largest type of date.

AMER HAJJ:

These dates have coloring similar to Medjools but are spicier with a caramel flavor and have a soft, sticky texture.  They are called "the visitor's date" in the Middle East, where they are a delicacy served to guests.

HALAWAY:

These dates have a sweet, buttery flavor with thick flesh and a light brown, blond color.

BARHI:

These dates have amber skin with a deep brownish maroon color.  They're soft, not to sweet and have a light buttery, caramel flavor.

SEMI-DRY DATES:

Are firmer and should be stored in a dark, cool place.

DEGLET NOOR:

An amber colored, elongated date have a delicate honey flavor, are firmer.  These are the most popular dates sold in the US, in grocery stores they are often in round pkgs. labeled "fresh pitted dates."

EMPRESS:

Dates have a yellow crown on top.  They're soft, not to sweet and a bit chewy with a deep caramel color.

ZAHIDI:

Date has a large seed and fibrous flesh.  This variety is often used for diced dates.  the flavor is similar to brown sugar.
