Hi food pals!
I am Mamacha and I have a simple dish/snack to share with you.

Roasted Plantain (not Bananas).
Required: a grill/oven, ripe/unripe plantains.
Method: peel the plantains and broil/grill over medium heat till cooked through-a light roasted (brownish) colour.
There is no need to salt or baste with oil, though you may if you please. There is also no need to slice the plantains but you could do so if roasting as part of a meat dish, added towards the end of cooking like you would potatoes and other veg. I have not been specific with cooking times because that usually depends on the size of the plantains.
In Nigeria (West Africa), it is a popular snack made over coal grill pots and eaten with peanuts (which are called groundnuts there). This is a great low-cal dish whose use is only limited to your imagination i.e., adapt and modify to your taste or requirement.

Thanks for your message Gapeach. And i have noted your likeness for plantains, if you look out in the Recipes section from time to time you will most likely find recipes using them both in the ripe and unripe states because i love plantains too! I dont browse regularly but whenever i do i shall endeavour to communicate with you.
