Low Fat Mexican Pizza
Similar to Taco Bell's Taco Pizza. Flour tortillas make a great crispy base for these low fat Mexican pizzas. These pizzas are also one of my favorite ways to use rotisserie chicken or leftover roasted chicken. Serve with a tossed green salad.
Ingredients: 4 low fat whole wheat flour tortillas 1 cup salsa 1 cup shredded cooked chicken 1/2 cup canned black beans, rinsed and drained 1/2 cup frozen sweet corn, thawed 1 cup reduced fat monterey-jack cheese
Instructions: Preheat oven to 450 degrees. Place tortillas on a large baking sheet. Spread 1/4 cup salsa over each tortilla. Divide and sprinkle remaining toppings, finishing with cheese. Bake for 8 minutes, or until cheese is melted.
