Low Fat Mexican Pizza


Similar to Taco Bell's Taco Pizza. Flour tortillas make a great crispy base for these low fat Mexican pizzas. These pizzas are also one of my favorite ways to use rotisserie chicken or leftover roasted chicken. Serve with a tossed green salad.

Ingredients:
4 low fat whole wheat flour tortillas
1 cup salsa
1 cup shredded cooked chicken
1/2 cup canned black beans, rinsed and drained
1/2 cup frozen sweet corn, thawed
1 cup reduced fat monterey-jack cheese

Instructions:
Preheat oven to 450 degrees. Place tortillas on a large baking sheet. Spread 1/4 cup salsa over each tortilla. Divide and sprinkle remaining toppings, finishing with cheese. Bake for 8 minutes, or until cheese is melted.

Serves 4

Per Serving:
314 calories
76 calories from fat
8.5g total fat (4.1 g sat. fat)
45 mg cholesterol
913 mg sodium
37.1 g carbohyrate
3.89 g fiber
22.5 g protein
