About your mousse - can you share your recipe/technique? I'll try to help - not knowing anything about your recipe - have you tried to whip some heavy cream and incorporate that and refrigerate a couple hours?

here I go...
1avocado medium peeled
1 cup basil leaves
1 / 2 cups chicken broth
1 large clove garlic
2 tablespoon lemon juice
½ cup vegetable oil
Preparation
Place the avocado, basil, chicken broth, garlic and lemon juice in the blender. Whisk until this soft. With the mixer on, gradually add oil. If you're too thick add more chicken broth to tablespoons. Season with salt and pepper to taste
