A Different Pot Pie
This uses a crust made for a double crust pie; line your 9-inch pie plate with the bottom crust; set aside. Grate 1 c. Cheddar cheese and 1 c. Mozzarella cheese; set aside.
In skillet, brown 2 lbs. ground beef; drain off - and at the same time:
Saute in a bit of olive oil:
1 large green pepper, chopped
1 onion, chopped
2 small zucchini, diced - seasoning with salt and pepper
Combine both mixtures adding:
1 large tomato, chopped (or canned diced is fine)
Sliced mushrooms, if desired
Spoon half of mixture into prepared crust; top with ½ of each cheese; top with remaining meat; top with remaining cheese. Place top crust on; cut vents in top.
Bake in preheated 350* F. oven for 35 to 45 minutes.
Let set 10 minutes before cutting.
NOTE: Use any vegetables you want in this pie. Optional: Serve with picante sauce or salsa.
