2 eggs 1/4 cup ketchup 1/4 cup water 1/2 cup minced onion 1 small bell pepper chopped 3 cloves garlic crushed 1 Tbsp. Worcestershire sauce 1 tsp. salt 1 cup soft Italian bread crumbs 2-3 lb. very lean ground beef
Glaze:
Ketchup, brown sugar and a touch of honey. Mix together to form a thin paste.
Preheat the oven to 350 degrees.
Beat eggs in a large bowl. Add ketchup, water, onion, bell pepper, garlic, Worcestershire sauce and salt. Mix in soft bread crumbs, mix all of this with your very clean hands or I use a vinyl glove that has been washed good.
Mold into loaf and place on a rack in oven, cover with non-stick foil and bake for 1 hour or until juices run clear and is no longer pink inside. You may need to drain some of the juices during the baking. When done remove from the oven and remove the foil and coat the top and sides of meatloaf with glaze.
Watch it closely and broil just until glaze starts to bubble.
Remove from the oven and let stand about 15 minutes before slicing.
Makes about 10 servings

This is good served with Garlicky mashed potatoes, tiny English peas with pearl onions creamed, cornbread, coffee or tea.
