Title: ANY-FRUIT CRISP (reduced fat recipe)

For Crisp Topping:
1/2 cup walnuts
1 cup flour
3 tablespoons light brown sugar firmly packed
1/4 teaspoon ground cinnamon
Pinch salt
3 tablespoons butter melted (in microwave or small saucepan)
3 tablespoons maple syrup

For Filling:
4 cups of fruit (use berries, or fruit cut into bite-sized pieces)
1/4 cup sugar
2 tablespoons flour (if fruit seems particularly juicy, increase this by a
tablespoon)


Preheat oven to 375* F. Toast walnuts by spreading on pie plate and heating in oven until fragrant (about 7 minutes). Chop nuts medium-fine.

Combine flour, brown sugar, cinnamon and salt (if using unsalted butter) in a mixing bowl. Drizzle melted butter and maple syrup over top and blend on low speed until crumbly. Add chopped nuts and mix well. (The topping can be prepared up to a week ahead and refrigerated.)

Put diced or sliced fruit in large bowl. Add sugar and taste; add more if necessary. Sprinkle flour over fruit and mix gently. Turn mixture into 2-quart baking dish.

Spoon topping over fruit, pressing down lightly. Place dish on baking sheet (if necessary) to catch any overflow. Bake on center rack of oven until topping is golden brown and juices have thickened slightly, about 35-45 minutes.

Serve warm with vanilla ice cream, if desired.
