Sometimes you just put things together for a quick meal.
This is one that is very easy to prepare and very enjoyable:
No measurements are given - this is just one of those "eyeball" dishes.
Enjoy!
Cook pasta according to package directions (al dente) - penne works well but it's not etched in stone - use pasta of your choice. Drain.
Meanwhile, cut some ham (deli ham or cooked ham) into 1-inch strips and saute in skillet in a bit of olive oil (about 2 T.) with fresh minced garlic until ham is browned. Add a can of Italian tomatoes (for some reason if you use whole tomatoes you should drain - they seem so watery!)
Add roasted and thinly sliced peppers or sun-dried tomatoes. Simmer to cook through; drizzle in a bit of cream - not much - you do not want to make it to liquidy; heat through.
Toss with pasta and serve hot with a nice side salad and some crusty Italian bread.
