Title: Acorn Squash With Spiced Applesauce And Maple Drizzle

1 acorn squash - (abt 1 1/2 lbs), deseeded, and
cut into 6 wedges
2 tsp olive oil
1/4 tsp salt
1/8 tsp freshly-ground black pepper
3/4 cup unsweetened applesauce
2 tsp butter
1/8 tsp ground cinnamon
1 Tbs Atkins Sugar Free Pancake Syrup, warmed


Heat oven to 375 degrees. Brush squash with oil and sprinkle with salt and pepper. Place on a jelly roll pan lined with aluminum foil. Bake until squash is fork tender, about 20 minutes.
In a small pot heat the applesauce. Stir in butter and cinnamon; cook 1 minute more.
Serve squash with a dollop of applesauce and a drizzle of syrup.
