Title: Antipasto Salad on Romaine and Spinach

1 small can artichoke hearts, drained and quartered
1/2 Cup roasted sweet pepper slices
1/2 Cup Italian salad dressing or balsamic vinaigrette
1/2 - 1 Cup canned garbanzo beans, drained
1/4 Cup red or sweet onion, chopped
1/4 Cup pitted ripe olives or Greek olives
2 Ounce provolone or mozzarella cheese, cut in wedges
6 cherry or grape tomatoes, halved
Tuscan bread, sliced thick
Romaine and spinach leaves

 Cut artichokes into halves and combine with beans, onions and peppers in a small bowl. Add salad dressing and let marinate for at least 15 minutes.

Place salad greens on a large platter. Top with vegetables, olives, cheese and the artichoke and bean mix. Add meat slices and serve with additional salad dressing and Tuscan bread.
