I needed something to go on top of perfect 1" thick butterfly pork chops. I didn't want anything too sweet or overpowering.
1/2 med. Onion, sweet, Vidalia 1 ea Apple, Granny Smith or other firm cooking type, peeled and cut into chunks. 2 tbsp light brown sugar 1 tbsp Balsamic Vinegar, good stuff 1 tsp chicken base, dry 1/2 cup water
Dice onion very fine. Sweat with a little vegetable oil over medium low heat till onions are soft, not browned. Add apple chunks and cook till just about done. Add vinegar, chicken base, brown sugar and water. Stir, cover and simmer till apples are soft. Mash in pot with potato masher and keep warm.

My Comments:
This is not a sweet sauce and as a result it fits very well with the light taste of pork chops.
