
1 Teaspoon soy sauce
1 Tablespoon honey
1 1/2 Cup extra sharp cheddar cheese, grated
1/2 Cup walnuts, chopped
1/2 Teaspoon cinnamon
1/4 Cup red wine vinegar
16 oz. bag coleslaw mix
2 apples, cored & cut like matchsticks
2 Tablespoon olive oil
2 Tablespoon sesame oil
2 celery stalks, trimmed & cut into 1/4" slices
2 Teaspoon Dijon mustard
Fresh ground pepper and salt to taste
In a small bowl whisk together ingredients for dressing (vinegar, sesame oil, honey, mustard, soy sauce, cinnamon, olive oil, salt and pepper to taste) and set aside. In large bowl combine ingredients for salad (coleslaw mix, apples, celery sticks, cheddar cheese, walnuts). Toss in dressing and mix till thoroughly combined. Refrigerate 15 minutes to chill and serve.
