- 1 C. vegetable oil
- 2 C. sugar
- 3 eggs
- 2 tsp. vanilla
- 3 C. flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 3 C. granny smith apples, peeled and diced (about 6-8 med apples)
- TOPPING
- 1 C. brown sugar
- 1/4 C. butter
- 1/4 C. milk
- Cream together oil, eggs and sugar in a large bowl. In a medium bowl, mix dry ingredients. Combine with creamed mixture, a little at a time, until well blended. Add diced apples and combine just until apples are mixed in well. Spread into a 9 x 13 pan and bake at 350 degrees for 45 minutes. When cake is almost done, combine brown sugar, butter and milk in a medium saucepan. Bring to a boil and simmer for 3 minutes. When cake is done, poke holes in cake and pour brown sugar mixture over top.

My Comments:
This cake is delicious and really moist. It's especially good with your favorite ice cream. Serve warm for best results. I use the end of a wooden spoon to poke holes in the cake. It makes the holes just big enough for the brown sugar glaze to soak into the cake.
