
1 Clove Garlic, minced
1/2 Chopped tomato, seeded
1/2 Teaspoon Cumin
1/2 Teaspoon Salt
1/4 Cup Green chilies chopped
2 Teaspoon Lime juice
2 Tablespoon Onion, chopped
4 Cup Trimmed fresh asparagus
Can be made ahead of time
Cook or steam asparagus until tender. Drain well and cool.
Using a food processor or blender, process asparagus with garlic, onion, lime juice, chili's and seasonings. Mixture should be smooth.
Transfer to a bowl. Stir in tomatoes. Cover and chill before serving.
Can be made ahead.
Note: (2) 10 ounce packages of frozen asparagus can be substituted for fresh.
Serving Ideas:
Serve with tortilla chips, toasted pita chips or cut vegetables. Also good as a dip for cooked shrimp.
