Avocado Shrimp Louis


 






Ingredients:
1/4 cup Mayonnaise
2 Tbsp. Chili Sauce
1 Tbsp. Dijon Mustard
1 Tbsp. Fresh Lemon Juice
1 tsp. Lemon Zest
1 head Bibb Lettuce
1 each Ripe Avocado
Lemon slices for garnish.
Cooked, Peeled and Deveined Shrimp


 







Preparation:

Combine mayo, chili sauce, Dijon, juice and zest in a small bowl. Cover and refrigerate.
Core the bibb and find an inner leaves that resemble a small cup. Make sure lettuce is free of dirt. Nest one or two leaves together to form a bowl. Roughly chop some of the remaining leaves and place in bibb bowls. Top with shrimp and slices of avocado. Drizzle dressing over the salad and squeeze with a piece of fresh lemon.
