This recipe makes ONE drink
In a glass, place:
12 mint leaves
1/2 of a lime cut into wedges
Then mush these together gently to release the oils from the mint and juice from the lime.
Add:
2 Tb simple syrup (see recipe below)
Ice to top of the glass
1 jigger ( 1 1/2 oz ) Bacardi light rum
Top off glass with club soda
Stir all together and serve with a sprig of mint and a wedge of lime on the glass.

Simple Syrup:
Put one cup of water in a small saucepan.
Add two cups of sugar.
Heat to a boil while stirring.
Reduce heat and continue to stir until the sugar dissolves.
Cool to room temperature.
Find a clean container that will hold at least a cup and a half.
Using a funnel, pour liquid into container.
Seal and store in refrigerator indefinitely.
Use whenever a recipe calls for simple sugar or simple syrup

And here's one more simple syrup you could use to sweeten a variety of drinks:
Minted Simple Syrup:
1 cup granulated sugar
1 cup water
2 tablespoons light corn syrup
1 1/2 cups packed fresh mint leaves, chopped
In a saucepan bring sugar, water, corn syrup and mint to a boil, stirring until sugar is dissolved. Simmer syrup, undisturbed, 2 minutes. Pour syrup through a fine sieve, pressing on solids. Cool at room temperature.
Syrup keeps, covered, in the refrigerator for weeks.
Makes about 1 1/2 cups.
