Title: Bacon and Egg Lasagna

12 uncooked lasagna noodles


1 lb bacon, cut into 1" pieces, cooked crisp, reserve drippings


1 cup onion, chopped


1/3 cup flour


1 tsp salt


1/4 pepper


4 cups milk


12 eggs, hard cooked and slices


2 cups shredded Swiss Cheese


1/3 cup grated Parmesan cheese


Heat oven to 350 degrees.  Grease a 9x13 baking dish. Cook noodles as directed on package.  Cook bacon and reserve 1/3 cup drippings.  Brown onions in drippings.  Add flour and seasonings to onions, stir until smooth and bubbly.  Gradually add milk stirring constantly until it boils and thickens.


Spoon small amound of sauce into bottom of pan. Layer noodles, eggs, sauce, cheese 3 times.  Sprinkle with Parmesan cheese.  Bake for 25-30 minutes, let stand 10 minutes before serving.

My Comments:
Yummy, my mom always made this for Christmas morning, and now I do to. I make it the night before and put it in the fridge and then I bake it when we get up to see what Santa brought us... I have also used to no boil noodles, they work, but you need to soak them in warm water first to give them a jumpstart.
