Title: Baked Chicken Thighs

Clean thighs and place in single layer in baking pan with a bit of olive oil; thin sliced red bell pepper over the thighs; thin sliced onion over that. Fresh garlic cloves scattered.  Season with salt, pepper and parsley.

Combine 1/2 c. apricot/pineapple preserves with 1/4 c. Worchestershire sauce and 1 T. brown sugar - pour over chicken.

375* F. till done (took about an hour)

 


Depending on the number of thighs you are baking will depend on how much "sauce" you need to make.




My Comments:
This can be served with hot rice, rice pilaf or couscous.
