Title: Baked Pears with Cranberries

3 pears, halved and cored
2 tbsp orange marmalade
½ cup sugar
¼ tsp. salt
2 tbsp butter, melted
1 cup cranberries, cut in half or coarsely chopped
2 tbsp orange juice concentrate
2 tbsp water
6-12 tsp. sour cream
 
Preheat oven to 350°F. Spray a casserole dish with non-stick cooking spray. Put pears fairly close together in casserole dish, cut side down. Combine marmalade, sugar, salt, butter, cranberries, orange juice concentrate and water; pour over pears.

Bake pears for about 30 minutes, or until pears are tender enough to cut with a fork, but not mushy. Put 1 pear, round side down, in each serving bowl. Put 1-2 tsp. of sour cream into the hole in each pear. Pour a little pan sauce over each pear and serve.

Makes 6 servings


My Comments:
Dried cranberries can be substituted for fresh cranberries; increase water and orange juice concentrate to ¼ cup each and let sit overnight to rehydrate cranberries. Pears do NOT have to be peeled.
