You can also try this wonderful dish with any white fish - flounder, sole, tilapia.



3 tbsp. Extra Virgin Olive Oil, plus some for oiling the pan
1 pound fillet of red snapper
4-5 plum tomatoes
1/2 cup plain bread crumbs
1 tablespoon fresh flat leaf parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/2 onion, sliced into thin rings
paprika




Preheat oven to 450 degrees. Slice tomatoes lengthwise, and squeeze to remove seeds. Place fish filets in a baking dish that has been lightly oiled with olive oil. Place tomato halves around the perimeter of the dish, face up. In a bowl, mix bread crumbs, parsley, salt, pepper, and olive oil. Spoon mixture over fish and tomatoes, and sprinkle with paprika. Place sliced onions over fish. Bake, uncovered, until fish is no longer translucent, and flakes easily (10 minutes for each inch that the filet is thick). Serves 3-4.
