Banana Bread
Makes one loaf


Ingredients
6 tbl butter
2/3 cup sugar
2 each eggs
1 1/3 cups all purpose flour
¾ tsp salt
½ tsp baking soda
¼ tsp baking powder
1 cup ripe bananas, mashed with a fork (approx. 2 - 3 bananas)
½ cup chopped pecans or walnuts


Method
1. Pre-heat oven to 350°
2. Combine the butter and sugar in a mixer. Blend until creamy.
3. Add the eggs one at a time and blend until creamy.
4. Combine the flour, salt, baking soda and baking powder. Add the mixture to the butter-egg mixture and blend just until a batter is formed. Do not over-mix.
5. Add the mashed bananas and pecans and blend just until incorporated.
6. Turn the batter into a loaf pan (approx. 9"x5"x3"). Bake at 350° degrees for approximately 50 minutes or until a knife comes out clean.


Allow to cool approximately 15 minutes before removing from pan.
