Batter-Dipped Mozzarella Sandwiches
4 thick slices Italian Bread
4 slices Mozzarella Cheese
2 slices tomato, patted dry with a paper towel
4 fresh basil leaves
1 large egg
1/4 cup milk
1 Tbsp olive oil
1 Tbsp unsalted butter
1 garlic clove, flattened and peeled
Make 2 sandwiches of bread, mozzarella, tomato slice and basil. Whisk egg and milk in shallow bowl until blended. Heat 1 Tbsp each of oil and butter in skillet over medium heat. Add garlic to skillet and cook 2 mins, making sure it does not brown. Remove and discard garlic. Dip sandwiches into egg mixture, coating both sides, without saturating bread, and place in skillet.
Fry, turning once until bread is golden brown and cheese is melted, about 6 minutes
This recipe serves 2 but can be increased as needed
