3 1/2 lb Prime Beef Loin Trimmed and chain removed, wrapped in thin slices of suet and tied 2 lbs mixed mushrooms, shitake, oyster, button etc... 2 lb hard tofu 1/2 lb Very good Blue Cheese Salt and Pepper 2 pkgs Pepridge Farm Puff Pastry (2 pieces per pack fozen)
Preheat oven to 350. Bake roast wrapped in suet until internal temp reads 125 by themometer. Remove from oven and let cool to room temp.
Take the puff pastry out of the freezer and let it thaw till you can handle it. In a pinch you can microwave it but be carefull it does not get gooey.
While roast is cooking drain tofu in sive with coffee filter or double wrap of cheese cloth for at least 20 minutes. Mix together with blue cheese and refrigerate till it is easy to handle, about 15 minutes (freezer works too but don\'t let it get too hard).
Remove twine and suet from roast. Very roughly chop mushrooms and place on top of roast. Cover with Tofu mixture all around the roast with the mushrooms on the top only. Lay out two pieces of puff pastry overlapping the ends a little and pinch the seam shut. Place roast on top of pastry. Cover roast with the other 2 pieces of pastry. Make sure the roast is completly enclosed in the puff pastry and pinch any seams together including the ends. Place whole wrapped roast in a roasting pan with the slotted cover in place. If you don\'t ust the slotted cover on the pan the roast will be soggy on the bottom. Use a themometer in the center of the roast and bake at 325 till the internal temp reaches 130. Remove roast immediatly carry over cooking will take the internal temperature to 135 or medium rare. Slice in a bias about 1 inch thick. If you are going to go to the trouble of cooking this thing please start with real Prime beef. What you get in the grocery store will usually be Choice or even Select. The way this is cooked they will just not do. The reason for the suet is to put back some of the fat that is missing in the loin. If you can find it use the lacy fat you see them using on TV. It works better but suet works just fine. Your butcher will cut very thin slices of suet for you if you ask and he should even wrap the roast for you. Make sure you ask for the chain meat and all the trimmings back as the chain makes excellent beef for philly steak sandwiches and the trimmings are great for stock or soup. After all if you are going to spend near $20.00 a lb for meat get all you bought.

My Comments:
This is my take on a classic. I do not like duck or goose liver and I really do not like what they do to the animals to get it. The tofu works very well and could be seasoned to simulate the pate\' I guess, if you want. This roast comes out sooooo tender and flavorfull. Be carefull though, you might just come to love this thing and that could easily send you to the poor house.
