Title: Bengali Breakfast Grains

1 Tbsp. olive oil
1 cup coarse grind bulgar
1-1/2 tsp. fennel seeds
2-1/4 cups fat-free milk, divided
1 tsp. pure almond extract
1/4 tsp. salt
1/2 tsp. ground cardamom
1/2 tsp. ground cinnamon
Pinch nutmeg
1 cup fresh or 1/2 cup dried blueberries

Heat the oil in a 2 qt. saucepan over medium heat.  Add bulgar and fennel seeds and cook, stirring frequently, until bulgar is toasted, about 5 minutes. 

Remove from heat stir in 2 cups milk, almond extract, slat and spices.  Return to heat at lowest simmer, cover and simmer until most, but not all of the liquid has been absorbed.

Spoon into serving dishes.  Pour about 1 Tbsp. milk over each serving.  Garnish with blueberries.

Makes 6 servings
