
1 Can (15 oz.) black beans, rinsed & drained
1 medium tomato, seeded & chopped
1 small avocado, peeled & pit removed, then chopped
1 Cup shredded Cheddar cheese
1-1/2 Cup sour cream
1/2 Head iceberg or romaine lettuce, chopped or shredded
1/4 Cup red onion, finely chopped
1/4 Cup chunky salsa
1/4 Cup sliced black olives
2 Tablespoon lemon juice
2 Tablespoon fresh cilantro or chives, chopped

In a medium bowl, mix together the black beans and salsa, and set aside. In small bowl, toss the chopped avocado with lemon juice to prevent browning and set aside. Line serving plate with lettuce and top with layer of black bean mixture. Spoon sour cream onto beans. Sprinkle with avocado, cheese, tomato, olives, red onion and cilantro. Serve immediately with tortilla chips.
If desired, cover tightly and refrigerate until ready to serve. Can be made up to 4 hours ahead.
