Title: Black Bean Salsa

1/3 cup finely chopped red bell pepper
1/4 cup finely chopped red onion
1/4 cup chopped cucumber
1/4 cup plum tomato
2 Tbsp. chopped celery
2 Tbsp. chopped seeded jalapeņo pepper
1 Tbsp. chopped fresh basil
2 Tbsp. olive oil
2 Tbsp. balsamic vinegar
1 Tbsp. fresh lime juice
1-1/2 tsp. minced fresh thyme or 1/2 tsp. dried thyme, crushed
1/2 tsp. salt
1/2 tsp. ground cumin
1/2 tsp. chili powder
1/4 tsp. ground black pepper
3 garlic cloves, minced, I like 4 crushed
2 (15-oz.) cans black beans rinsed and drained

Combine all ingredients in a medium bowl, stir well.

Cover and chill 2 hours.

Makes 16 servings
My Comments:
This taste so much better than the salsa that are bottled, the texture is nice to. If you want it hotter just use the seeds of the jalapeņo. I make this all summer long even put it in summer wraps. Yummy
