1 can croissants - low-fat, frozen 1 pound sausage meat - cooked and drained 1 cup hash brown potatoes - defrosted 1 cup cheddar cheese, low fat - shredded 4 each eggs
Preheat oven to 375° F. Open low-fat can of croissant rolls. Spread onto a pizza pan. Spread uncooked hash brown potatoes over rolls. Add layer of cooked sausage over hash browns. Stir eggs and pour over the hash browns and sausage mixture. Sprinkle cheese over top. Bake for 10-12 minutes. Let cool for 10 minutes. Cut into 8 slices.
Serve with orange juice or fresh fruit.
Notes:
Sausage can be cooked the night before. Cooked hamburger or chopped ham can be substituted for sausage.
