3 small portobello mushrooms, cut into 1/4 inch thick slices
1/4 cup balsamic vinegar
2 tablespoon olive oil
1 loaf, fresh Italian bread, cut into 15 slices
1 clove garlic, peeled
1/2 cup crumbled blue cheese
salt and freshly ground pepper to taste
Preheat oven to 400 degrees.
In a shallow dish, lightly greased with olive oil, lay out mushrooms
Sprinkle with balsamic vinegar and add salt and pepper to taste.
Bake for approximately 10 minutes.
Place oven on broil and broil bread slices until they are slightly browned, remove from oven.
Gently rub each slice of bread with the garlic clove.
Place 1 or 2 slices of portobello on each piece of bread.
Add a sprinkling of blue cheese and serve.
*NOTE* Portobello mushrooms absorb liquid very quickly and will take on the flavor of the liquid they are cooked or sauteed with. I often sautee them with chicken stock.
