Cajun Breakfast With Andouille Sausage
Ingredients: 10 oz. hashbrowns 3 oz. chopped green peppers 3 oz. chopped onions 3 oz. sliced fresh mushrooms 3 oz. shredded cheddar cheese 2 Tbsp. vegetable oil 4 oz. hollandaise sauce 2 eggs sprinkle of cayenne pepper 5 oz. Andouille sausage 1 thick sliced toasted piece of bread
Preparation:
Par boil potatoes. Before shredding, make sure potatoes are well chilled. Heat grill to 400 degrees. Place potatoes on heated grill with vegetable oil. Place vegies on top of cooking hashbrowns. When hashbrowns are medium brown, flip over. Place cheese on browned hashbrowwns. In separate egg pan, prepare the eggs..cook over medium heat. Heat hollandaise sauce. Pat andouille sausage into patty, place on grill. Cook 3 minutes on each side. Place hashbrowns on plate, eggs on top and cover with hollandaise sauce, sprinkle with cayenne pepper. Place sausage and toast and eat.
