Calico Beans
1/2 pound bacon
1 Cup chopped sweet onion
1 pound ground meat
1 can light red kidney beans, drained
1 can northern beans, drained
1 can butter beans, drained
1 Cup ketchup
1 Cup light brown sugar
1 Tbsp white vinegar
1 Tbsp yellow mustard
Cook bacon in skillet/frying pan until crisp. Once cooked, remove from grease and crumble. Sautee onion in bacon grease until transparent. Remove from the grease and set aside. Brown ground meat in grease and drain well. Mix together the ketchup, brown sugar, vinegar, and mustard. Add the beans and stir gemtly. Add bacon, onion and ground meat. Stir just to blend. Cook in a bean pot for aproximately 1 hour at 350-375, or in a crockpot overnight on low.
*Note: This is a side dish but my family likes it served over white rice as a main dish. Its fantastic either way!
