4 1/2 lbs sweet potatoes or yams 10 Tbs unsalted butter, at room temperature 1 cup apple cider 1 cup orange juice 1/2 cup packed light brown sugar 1 Tbs packed light brown sugar 1 small cinnamon stick 2 allspice berries salt, to taste freshly-ground black pepper, to taste
Preheat the oven to 400F. Bake the sweet potatoes until tender, about 1 hour. Peel and slice into 1/2- to 3/4-inch slices. Arrange in a casserole greased with 1 tablespoon of the butter. Combine the cider, orange juice, brown sugar, cinnamon, and allspice in a saucepan and boil for 10 minutes. Season with salt and pepper. Remove the cinnamon and allspice. Whisk in the remaining 9 tablespoons butter. Pour the mixture over the sweet potatoes. Bake for 20 to 30 minutes, or until heated through. This recipe yields 6 servings. Comments: For the health conscious who are watching their fat and calorie intake, the amount of butter may be cut in half.
