2 cups mango peeled and cut into 1/4-inch cubes 1/2 cup cucumber peeled, seeded and cut into 1/4-inch cubes 1/4 cup fresh cilantro chopped 2 Tbs green onions finely chopped 1/2 Jalapeno pepper seeded and finely chopped 3 Tbs fresh lime juice 1-1/2 tsp brown sugar 1 tsp fresh ginger peeled and minced dash pepper
In medium-size bowl combine mango, cucumber, cilantro, green onion, jalapeno, lime juice, brown sugar, ginger and pepper. Cover and refrigerate at least one hour to allow flavors to blend.
