Chicken-Cilantro Pasta Sauce
Serves 4
- 1 pound chicken-cilantro sausage, casing removed
- 1–2 tablespoons organic extra virgin olive oil
- 1 onion, chopped
- 1 can (14.5 ounce) organic tomato sauce
- 1 can (15 ounce) low sodium chicken broth
- 1 bunch fresh cilantro, chopped
- black pepper to taste
Sauté chicken sausage and onion in as little oil as possible. Add chicken broth and simmer for 15 minutes. Add tomato sauce; stir and cover; cook for 5–10 minutes. Turn off heat. Add cilantro and black pepper and let steep for 5 minutes. Serve over pasta, rice or couscous.
