Marinate chicken peices in a mixture of soy sauce, garlic, onions, and pepper for at least 1 hour(overnight is best).


Add some vegetable(or your favorite) oil to a pan, allow oil to heat up


Add chicken peices to oil, seperate in the pan, adding about 1/2 cup of viniger(I use cider vineger).  Add soy sauce, onions and additional garlic(one clove, minced) to pan.  Cook over medium heat, turning frequently, until all sides are browned.  Cover and reduce heat.


Continue cooking until chicken is cooked through, about 30 minutes(test doness by poking chicken thigh at thickest part with fork-if juices run clear, chicken is done.  Serve with steamed rice and your favorite vegetables!

My Comments:
Adobo is from the philippines, and is a delicious and satisfying dish, and can also be made with pork or beef, along with the chicken. Add a little flour to the pan sauce and stir in well, will give you a 'gravy' that you can spoon over the chicken or the rice! Keep your heat on medium-low or low, after covering. Remember, chicken must be cooked thourghly!
