Title: Chicken Breasts, Almond-Crumb LC-5

1 oz almonds, blanched; ground
1 Tbs breadcrumbs; plain dried
1 Tbs skim milk
1 Tbs oil
1 1/2 Tbs Parmesan cheese; grated
1/8 tsp salt
1/8 tsp basil
2 cutlet (4 oz) chicken breasts, bnls, sknls; pound
2 wedge (12 g) lemon


On sheet of waxed paper or on a paper plate combine ground almonds,breadcrumbs, cheese, salt, and basil.
Dip one chicken cutlet into milk, then into crumb mixture, coating both sides evenly; repeat procedure with remaining cutlet, being sure to use all the salt and crumb mixture.
In 12-inch skillet; add chicken and coat, turning once, until browned on both sides, 3 to 4 minutes on each side. Serve with lemon wedges.
MAKES 2 SERVINGS, ONE CUTLET EACH Each serving provides; 3 protein exchanges; 1 1/2 fat exchanges; 110 calories optional exchange.
