3 Tbs Butter 1/2 cup Chopped onion 1 tsp Dried rosemary 2 cups Cubed cooked chicken or turkey 2 cups Cubed cooked potatoes 1 cup Chicken or turkey gravy, or heavy cream or a mixture of both Salt, to taste Freshly-ground black pepper, to taste 1 Tbs Finely-chopped parsley
Heat the butter in a large skillet until foaming. Add the onion and rosemary and cook until the onion is soft. Add the chicken or turkey and potatoes, stir well, and cook for 3 to 4 minutes, pressing down with a spatula to form a flat cake. Lower the heat to medium-low and pour in the gravy and/or cream. Sprinkle with salt and pepper and cook for 5 minutes more. Turn out onto a serving platter and sprinkle with parsley. This recipe yields 4 servings.
