4 split chicken breast
1 pkg. homestyle noodles
2 red peppers chopped
12 oz fresh mushrooms sliced
1 stick butter
1/4 cup flour
1 qt half and half
1 cup chicken broth
1/3 cup sherry
Salt
pepper
Parmesan cheese
Buttered seasoned bread crumbs
Boil chicken 20 mintues. Remove from water and add noodles. Cook noodles about 10 minutes. Drain and rinse. After chicken has cooled, remove skin and bones and chop.
in a pan with high sides, melt butter. Add mushrooms and peppers and cook until tender. Add flour and stir until coated. Pour in half and half and stir until it thickens. Add chicken broth. Remove from heat and pour in sherry. Add chicken and noodles, salt and pepper. Pour into a 9 x 13. Top with buttered bread crumbs and parmesan.
Cook at 350 for 45 minutes.

This is from my husband's Russian grandmother who was also a caterer. We love this dish. It's a nice comfort food on a cold day.
