2 cups all-purpose flour
2 teaspoons baking powder
6 Tablespoons unsweetened cocoa
½ cup melted butter
1 cup sugar
2 eggs
¾ cups milk
1 teaspoon vanilla
1 cup raspberry baking chips *see comments*
Additional sugar for topping
In a large bowl, combine the flour, cocoa and baking powder. Set aside.
In a mixing bowl, mix the butter and the sugar. Add the eggs, milk and vanilla. Mix well. Stir into the dry ingredients, just until moistened. Fold in the baking chips.
Fill paper lined muffin tins 2/3 full. Sprinkle sugar over the top of muffins. Bake at 375° for 20-25 minutes or until the muffins test done. Cool for 10 minutes on a rack, before removing from pans. Makes one dozen
