Ingredents:

Orange Juice  1pt.
Egg Yolk  8 yolks
Sugar      4oz
Ap Flour  3oz
Bittersweet Chocolate, chop fine   8oz  
Orange Liqeur  2 fl. oz 
Butter melted  as needed 


Sugar  as needed
Egg Whites  16 
Powderd Sugar (optional)  as needed


Procedure

Heat orange Juice in sauce pan to lukewarm
wisk togeather egg yolks and sugar.
Whisk flour and warm orange juice and add to egg yolks and sugar and cook tell cought the back of a spoon dont allow to boil. Remove from heat 
 
Stir in Chocolate tell it is melted. Stir in Liqueur. and Cover with plastic wrap hold at room tempeture 

Brush ramikins with butter and dust with sugar 
Preheat oven to 425 degrees. Place  a sheet pan in the oven. 
Whip egg whites to stiff peaks with the remaing 1 oz of sugar  fold egg whites into chocolate base and spoon the mixture into the prepared ramikings. Should be filled within 1/4in of the rim smooth top and bake immediatly. 

Done when well risen and and top and edges are apper dry about 12 minutes. Dont touch souffle to test for doness 

If desired sprinkle souffle with powderd sugar and serve immediatly.
