1/4 lb sliced mushrooms 1/2 clove garlic 1 tsp butter 2 tsp cornstarch 1 cup low sodium beef broth 1/4 tsp salt and pepper, (combined) 2 green onions, chopped
Add all ingredients except cornstarch and broth to a microwaveable bowl. In a small bowl mix cornstarch and broth until well combined. Pour over vegetable mixture. Cover and microwave on high for 3 minutes. Stir. Microwave another 3 minutes or until mushrooms are tender and sauce is transparent. Use as a topping for meat, chicken or even potatoes. This recipe yields two 1/2-cup servings. Comments: For a different flavor use chicken broth instead of beef and add tarragon for topping chicken.
