ingredients:
1 -2 dozen hard shell clams (necks) opened and loose leave on 1/2 shell
1/2 cup each fine chopped onion, red & green bell pepper
several slices of bacon cut into 1 1/2" pieces
1/2 C white wine
about 1/2 C plain bread crumbs
INSTRUCTIONS:
Place clams on cookie sheet (be sure to drain off excess liquid)
sprinkle each clam with onions & peppers
sprinkle each clam with white wine (enough to show in shell)
cover each clam with bread crumbs (crumbs will absorbe any additional wine)
place a piece of bacon on each clam to cover.
place in preheated broiler till bacon turns brown, remove from broiler and place on serving dish and serve while hot.
