3/4c Salsa 1 11oz can white corn, drained 1 8 1/2 oz plg corn muffin mix 1 egg 1/4 c. toasted sunflower seeds 2 T Vegetable Oil
Combine 1/2 cup salsa and 1/4 corn, set aside. Combine corn muffin mix, 1/2 cup sour cream. egg, remaining salsa and corn. Mix well.
Heat oil in fry pan and drop mixture by tablespoons...pan fry 1/2 to 2 minutes per side until lightly brown.
Top with salsa/corn mixture and sour cream. Sprinkle with Sunflower Seeds.
Serve immediately....ENJOY!!!!
