Cottage fried sweet potatoes
3 slices bacon in 1/2 inch pieces 1 1/2 lb sweet potatoes, cooked and diced 1 tsp salt 1/2 tsp sugar 3/4 c chopped onion
In 10-inch skillet, cook bacon and onion until tender; add remaining ingredients. Cook uncovered over medium heat until potatoes are crispy on bottom. Turn with pancake turner and crisp the other side.
