Crab Cakes 2 cups crabmeat (lump and claw)* 1 medium onion, diced 1/2 medium green bell pepper, diced 1/2 medium red bell pepper, diced 2 eggs, beaten 1 Tbsp flour 1/2 tsp salt 1/2 tsp black pepper 3/4 cup cooking oil Thoroughly combine all of the ingredients except the oil and form the mixture into patties. Heat the oil in a skillet and then fry the pattie, turning once; brown on both sides. Serve while hot. *If finding fresh crabmeat is a problem, substitute 3 cans of rinsed and drained crabmeat.
