Crab Cakes
2 cups crabmeat(lump and claw) 1 medium onion, diced 1/2 medium green pepper, diced 1/2 medium red pepper, diced 2 eggs, beaten 1 Tbsp flour 1/2 tsp salt 1/2 tsp black pepper 3/4 cup vegetable or canola oil for frying Thoroughly combine all of the ingredients except the oil and form the mixture into patties. Heat the oil in a skillet, and then fry the patties, turning once, until brown on both sides.
Lemon Mayonnaise Sauce 1/2 cup mayonnaise 1/4 cup regular or light sour cream 2 Tbsp shipped fresh flat leaf parsley 2 tsp finely shredded lemon peel 2 tsp lemon juice 1/4 tsp coarsely cracked black pepper Combine all ingredients and mix thoroughly. Cover and chill until serving time. Makes 2/3 cup.
