1 cup fresh cranberries, chopped 1 cup unsweetened crushed pineapple 1/4 cup low sugar orange marmalade 1/2 tsp chopped parsley, optional Sugar substitute, to taste
In a microwaveable bowl, combine all ingredients. Microwave on high 2 to 3 minutes or until cranberries are tender. This may be stored, refrigerated in a jar. Use as a topping for chicken, turkey or pork. It may also be used as a spread over breads. This recipe yields ten 1/4-cup servings. Comments: If you prefer a sweeter spread, you may add sugar substitute just prior to serving.
