1 cup fresh cranberries, chopped 2/3 cup unsweetened orange juice 1 Tbs cornstarch Sugar substitute, to taste
Add all ingredients except sugar substitute to a microwaveable bowl. Stir well. Microwave on high 3 to 4 minutes or until mixture thickens. Stir 2 to 3 times during cooking. Cool and add sugar substitute to taste (equivalent to 1 teaspoon sugar). Glaze should be tart. Use as a topping for chicken, turkey, or pork. It may also be used as a spread over breads. This recipe yields 3 servings.
