4 strips Turkey Bacon cooked, crumbled and drained or 1/4 lb Turkey Ham - diced
1/2 C. Shredded -Lowfat Mozzarella or Cheddar Cheese
1/4 C. Minced Onion
1/4 C. Chopped Green /Red Peppers
4 oz. can drained chopped Mushrooms
1/8 tsp. Garlic Powder
1-2 tsp. Dried Parsley or Chives
Salt & Pepper
Mix all the ingredients together in a big bowl. Using a small ladle put about 1/8 C. into sprayed mini muffin tins, don't overfill them . Bake apprx. 15 minutes - till set and just starting to brown. This will make apprx. 20 - 24 muffins.
My Comments:
These reheat easily in the microwavw, and they freeze well too. They're great for a quick bite on the go for adults and kids. The original recipe called for pork sausage cooled and drained but it's just too high in fats.
